Creamy Polenta and Mushrooms

Creamy polenta and mushroomsWe love polenta and during the fall and winter months I like to add it to dinners in place of pasta, rice, or potatoes.  It’s a perfect side dish which pairs well with roasted or braised meats, especially ones with sauces and/or gravies.  Depending on how much liquid you add when cooking, polenta can be either cake-like or porridge-like.  The cake-like style is great for grilling in the summer but I think we prefer the loose, creamy style of polenta, especially when it’s colder. Ah gnocchi.  When gnocchi is made right they are like light and airy pillows; when made wrong like heavy and dense globs of potato.  They are one of Cheryl’s favorite foods and always in the running if we’re at an Italian restaurant and gnocchi is on the menu.  Gnocchi are made with the simplest ingredients, potatoes and flour, but you have to get the ratio correct.  It’s a fine line between glob and pillow. Winter Warmer: Chicken, Polenta, and Kale stew

Cold, rainy, wet, windy.  Chicago weather!  That’s what greeted me on the way to the grocery store today.  That’s right, our grocery shopping gets done on Mondays.  Being a real estate broker means you usually have some weekend work to do, like any service industry, so on Mondays I do some work from home in the morning and then run errands in the afternoon.  I like it actually because I’ve noticed grocery stores usually re-stock on Mondays so you get pretty fresh produce and meat.  And I can be in and out there really fast since everyone else is at the office.  It also enables me to shop to buy fresh ingredients for Monday night dinner so I don’t have to defrost anything.
